Sausages

Hey, if you're like me, you love sausage!

Here's a photo of me and some friends making it.

Now you want to know how to do the same thing. Here's what you do.

Get 50 lbs of trimmed pork shoulder butt. Don't trim all the fat off because you think it is healthy. Sausage isn't supposed to be healthy, so don't do it!

Cut the trimmed pork into 3 inch cubes and add the following spices before putting it through a grinder:

11 oz. of salt
7 oz. of black pepper
3 oz of fennel whole
2 oz of fennel ground, preferably freshly ground. A coffee grinder is the best
1 Tablespoon of crushed red pepper. (add more to spice this up a bit)

Mix everything up real good and then grind. But not too fine. You're not making hot dogs here.

Stuff the coursely ground and spiced pork into a sausage press and squeeze it into natural hog casing. Your sausage should look similar to the above photo.
